The Guijuelo Iberico ham reaches its “maximum”

At Estanislao we have a category called “Maximum”, a selection of hams and shoulders of excellent quality, from Iberian pigs treated in a special way.

These are thoroughbred pigs, set apart in the richest and most productive holm-oak reserves in the pasture. They have much more space to run around freely and get fat on acorns, abundant in quantity and quality.

Our estate managers keep a very close eye on these specimens, which exceed the average weights and produce a meat with extremely flavoursome fat marbling.

It is a gastronomic delicacy that we can appreciate after the long and painstaking curing process to which Estanislao “Maximum” hams and shoulders are subject.
